Oat Free Anzac Biscuits (Coeliac Safe!)

I have been trying for a while to get this recipe spot on as I have had SO many requests for an Oat Free Anzac Biscuit recipe using our Gluten Free Porridge. Well, I am excited to finally share this!! These biscuits are chewy and they are SO delicious. You won't believe they are gluten free.

Ingredients:

1 1/4 cups gluten free plain flour (I highly recommend using White Wings or Bobs Red Mill)

1 cup Traditional Gluten Free Porridge

1/2 cup caster sugar

3/4 cup desiccated coconut

150g unsalted butter

2 tbsp golden syrup

1 1/2 tbsp water

1/2 tsp bicarb soda

Method:

Preheat oven to 170C fan forced. Combine the flour, oats, sugar and coconut in a large bowl.

In a small saucepan place the golden syrup and butter and stir over low heat until the butter has fully melted.

Mix the bicarb soda with the water in a separate container and then add to the golden syrup mixture. It will bubble and get all fluffy whilst you are stirring together so remove from the heat.

Pour butter mix into the dry ingredients and stir until fully combined. Roll tablespoonfuls of mixture into balls and place on baking trays lined with baking paper, press down on the tops to flatten slightly.

Bake for 15 minutes or until golden brown.

*Note: Rice flakes may be still slightly crunchy after cooking. I noticed they did continue to cook out while they were cooling and were enjoyable to eat once cooled.
