Apple Pie Baked No-Oats

This is my current coeliac safe, hyper-fixation breakfast! Apple pie baked no-oats made with our Gluten Free Porridge. 

Ingredients:

1/2 Cup of Tinned Apples

1 Cup Bask & Co. Gluten Free Porridge of choice

1 Cup Cottage Cheese

2 Eggs

2 Tbsp Honey

1 Tsp Maple Syrup

1 Tsp Baking Powder

Peanut Butter to drizzle (measure with your heart)

Method:

Preheat oven to 180c (fan forced) Mash apples in a small baking dish. 

In a small food processor add porridge, cottage cheese, eggs, honey and baking powder and blitz until smooth. Spoon on top of apples and then drizzle peanut butter on top.

Bake for 25 minutes or until browned and firm. Allow to cool slightly before serving and enjoy with a dollop of greek yoghurt. This recipe will be enough for 3-4 servings, so makes a great meal prep breakfast!
