Coeliac Safe Anzac Slice (oat free)


Looking for an afternoon sweet treat to enjoy with a cup of tea? This is SO delicious and was enjoyed by the whole family at my house!

Ingredients:

1 & 1/4 cups white wings gluten free plain flour

1 & 1/4 cups Traditional Gluten Free Porridge

1 cup firmly packed brown sugar

1 cup desiccated or shredded coconut

150g butter

2 tbsp golden syrup

1/2 tsp bicarb soda

2 tbsp boiling water

 

Method:

Preheat oven to 180°C/160°C fan-forced. Grease and line a 3cm-deep, square slice pan with baking paper.

Stir flour, porridge, sugar and coconut in a large bowl and make a well in the center.

Place butter & syrup in a saucepan over low heat. Cook, stirring occasionally, for 5 minutes until butter has melted and sugar has dissolved.

Combine bicarbonate of soda and boiling water in a small bowl. Remove butter mixture from heat and stir in bicarb & water mixture.

Add to flour mixture quickly and stir to combine.

Allow to sit for approx. 5 minutes to allow rice flakes in porridge mix to soften slightly.

Pour mix into prepared pan. Using the back of a spoon, press evenly into pan.

Bake for 30 minutes or until golden. Cool in pan completely before slicing into squares.
