No-Bake Strawberry & Cranberry Cheesecake - Coeliac Safe

This is a super quick and seriously delicious dessert! I've already eaten both jars since making this yesterday 🫣😆 So be warned that it is addictive! 

All you need to do is blitz:

3/4 cup of Strawberry & Cranberry Granola

1 tbsp Melted Butter 

Spoon the mix into the bottom of your jars and flatten down. Pop into the fridge while you make the topping. 

For the topping:

100g Ricotta Cheese

150g Cream Cheese

2 Tbsp Maple Syrup

Rind of 1 lime 

Blitz until smooth then add to the jars. Refrigerate for a few hours until chilled and set. Top with chopped strawberries and enjoy!
