Lemon & Blueberry Baked (Not) 'Oats'

I am seriously obsessed with this baked (oat free) oat recipe! It is just like cake for breakfast but macro friendly and keeps you full for hours. 

It is so simple to prep and then enjoy for 3-4 days with a dollop of greek yoghurt! All you need to do is add the following ingredients into a small food processor and blitz until smooth:

1 cup Cinnamon (or Traditional) Gluten Free Porridge 

1 cup Cottage Cheese (can be subbed out for coconut yoghurt for dairy free)

2 eggs

1 tsp baking powder

Rind of 1 lemon

1-2 tbsp maple syrup (depending on how sweet you prefer)

Then add to a small baking dish and top with a punnet of blueberries. Bake at 180c (fan forced) for approx 20-25 minutes or until golden brown and set.

That's it! SO simple and seriously delicious.
